A cast-iron Dutch oven

Lopez-Alt writes Texas chile con carne as a Dutch oven job. Sear chuck. Toast dried chiles. Simmer with the lid barely ajar so the sauce tightens. A tall stockpot of thin broth is a different stew. If the red should coat a spoon, start with a Dutch oven. If you are feeding a crowd a thin bowl, the stockpot is honest. Do not buy a six-quart pot because a trophy photo used one. Buy it because you brown meat and reduce.

ICS Traditional Red and CASI disqualify beans. ICS Homestyle requires them. Report the rule you are cooking under. A Dutch oven does not settle the beans argument. The rule sheet does.

Ancho, then guajillo

Dried chiles

Ancho is a dried ripe poblano. USDA FoodData Central lists Peppers, ancho, dried as its own food. Guajillo is dried mirasol. Ancho is body in a puree. Guajillo is color and tang. Do not buy chipotle first if the pot needs thickness. Chipotle is smoked heat. Taste the puree. If it is only sweet, add guajillo. If it is only hot and thin, you used the wrong chile for body. Leftovers have a clock

USDA Food Safety and Inspection Service: bacteria grow between 40 F and 140 F. Refrigerate leftovers within two hours. Divide a big pot into shallow containers. The next morning is not a plan.
